Simple Supper

There was something so deliciously simple about this supper. Healthy and nutritious, yet super fast to make, my brother and I sat and watched an old episode of Top Gear and munched away happily as neither of us fancied anything fussy or difficult for dinner.

Ingredients:

  • Smoked Mackerel (1 fillet per person)
  • Fresh Spinach (2 handfuls per person)
  • Basmati Rice (1 handful uncooked per person)
  • Sweet Chilli Sauce
  • Peanut Oil

Method:

  1. Boil the rice until cooked then drain thoroughly
  2. Tear up the mackerel into strips and stir into the rice
  3. Add a good amount of spinach and stir in (the steam from the rice will wilt it down a bit)
  4. Give a good glug of sweet chilli sauce and a dash of peanut oil (you can use other oils, or none at all, mine was just a little sticky!)
  5. Mix it all up and serve
