Simple Supper
There was something so deliciously simple about this supper. Healthy and nutritious, yet super fast to make, my brother and I sat and watched an old episode of Top Gear and munched away happily as neither of us fancied anything fussy or difficult for dinner.
Ingredients:
- Smoked Mackerel (1 fillet per person)
- Fresh Spinach (2 handfuls per person)
- Basmati Rice (1 handful uncooked per person)
- Sweet Chilli Sauce
- Peanut Oil
Method:
- Boil the rice until cooked then drain thoroughly
- Tear up the mackerel into strips and stir into the rice
- Add a good amount of spinach and stir in (the steam from the rice will wilt it down a bit)
- Give a good glug of sweet chilli sauce and a dash of peanut oil (you can use other oils, or none at all, mine was just a little sticky!)
- Mix it all up and serve
