How to make the perfect cocktail || Watermelon Cooler

The weather this week has been seriously strange. Huge floods in Cornwall at the start of the week, and then brilliant sunshine mid week. It’s been particularly warm, and we had also somehow managed to grab so many bargains from the supermarket on Monday night – including a huge watermelon wedge! 

I thought it would make a nice healthy pudding alternative to ice cream, but instead we ended up ruining that line of thinking by making refreshing and zingy watermelon coolers. Why have something healthy when you can intoxicate it in an alcoholic cocktail huh?!

These little watermelon beauties are really easy to make and taste divine on a warm Indian summers day- plus the actual ingredients are super duper cheap (especially if you end up buying most of them when they’ve been yellow labelled!)

Ingredients (makes approx 4 martini glasses full, or two big glasses)

  • Watermelon quarter’ in chunks
  • Juice of one lime or lemon
  • 2 tsp white sugar
  • Alcohol of your choice

Method

  1. Whizz up the watermelon in a blender then chuck in the sugar and lime or lemon juice. 
  2. Strain rough a sieve to get rid of the fleshy bits and pips
  3. Add in a hefty double shot of your favourite alcohol. We actually went for Apple schnapps as we should it would be tasty, I kinda wish I’d just gone for gin! 
  4. Some people also like to add lemonade, but we served it up straight in martini glasses neat and it was delicious. If you wanted a long drink you could serve in a tumbler with lots of ice and soda, tonic or lemonade.

Basically, what I’m trying to say is, if you mix watermelon into your favourite cocktail, it’s a crowd pleaser, is super easy to make and tastes like summery heaven in a glass!
